Out of meat but want the chili flavor for dinner? Here is your answer!
- 2 Cups Rice (uncooked)
- 2 Cans of Beans
- 2 Cans of Diced Tomatoes
- 1 Can of Peeled Tomatoes
- 1 Can of Tomato Sauce
- 1 Cup of Vegetable Juice
1 Pack (or more) of Taco or Chili seasoning
Optional ingredients: chopped onion, diced bell peppers
- Turn your oven to 350*
- Cook your rice until it is almost done, about 10-15 minutes. Add in the rest of your ingredients, including the seasoning packet(s). Mix until everything is blended together and the rice has taken on the color of the seasoning and tomato sauce.
- Pour the mixture into a oven safe pan(cake or casserole pans work great) that has been sprayed with a non-stick spray. Cover with aluminum foil and place in the oven.
- Cook for about 30-45 minutes, you can add shredded cheese on top or cubed cheese to it before you put it in the pan to make it have some nice pockets of cheese.
- Remove from oven, and serve
